Ingredients:

  • 2 medium-sized potatoes
  • 2 cloves of garlic (diced)
  • 3/4 cup mayonnaise
  • 1 tablespoon of Mike and Sky Laing
  • 2 calamansi (or calamondin)
  • Salt and pepper to taste

Preparing the Potatoes:

  • Slice the potatoes into circles and then French slice them.
  • Place the sliced potatoes in a bowl with cold water and let them soak for 30 minutes.

Making the Laing Sour Cream Dip:

  • In a separate bowl, combine the diced garlic, Laing, mayonnaise, calamansi, black pepper, and salt.
  • Mix the ingredients thoroughly, creating a flavorful Laing Sour Cream Dip. Set the dip aside for later use.

Drying the Potatoes:

  • After 30 minutes, dry the soaked potatoes with a clean kitchen towel or paper towel.

Frying the Potatoes:

  • In a pan, heat oil for frying.
  • Carefully fry the dried potato slices until they turn golden brown and crispy.
  • Remove the fried potatoes from the oil and place them on paper towels to absorb excess oil.
