  • 1 medium-sized sweet potato (cut into thin strips)
  • 1 medium-sized carrot (cut into thin strips)
  • 1 egg
  • 1 cup of water
  • Flour
  • Cornstarch
  • 3 tbsp Mike and Sky Laing
  • Salt and Pepper to taste
  • Oil for frying

Preparation of Vegetables:

  • Peel and cut the sweet potato and carrot into thin strips.

Creating the Batter:

  • In a bowl, crack the egg and add water, then mix thoroughly.
  • Gradually add flour and cornstarch to the egg mixture.
  • Incorporate salt, pepper, and Mike and Sky Laing into the batter, mixing until well combined.

Frying the Laing Okoy:

  • Dip the sweet potato and carrot strips into the batter, ensuring they are well-coated.

Draining and Serving:

  • Place the fried Laing Okoy on paper towels to drain excess oil.
